This recipe has been sitting in my drafts for what seems like forever, I made the chocolate chip greek yoghurt cookies back in April and have been meaning to make them again ever since. However things got in the way, things like shortbread, granola and marathons. But when a pumpkin dropped in my lap and I made a whole load of pumpkin puree I had to think of creative ways to use it. Somewhere in the filing cabinet that is my mind this recipe shuffled itself to the front and an autumnal greek yoghurt cookie recipe was born.

Pumpkin, Oat and Raisin Greek Yoghurt Cookies

I’m addicted to the oat, raisin, chocolate chip, everything style cookies they sell in Pret – but only when they are hot from the oven and I took my inspiration for my Pumkpin Autumn cookies from Pret’s delights.

I’ve provided the instructions for the PORGY Cookies (see what I did there) but if you’d like to make chocolate chip, omit the pumpkin, oats and raisins and add in 200g of your favourite chopped chocolate or chocolate chips. I used Seed and Bean Just Ginger Dark Chocolate to keep these beauties dairy free (swap your greek yoghurt for CoYo!). I have made these with a combination of flours and they are very versatile. For my chocolate ones I used Khorosan and Rye whereas for my PORGY Cookies I used wholemeal and plain. Both came out super. Let me know what flours you play with.

Chocolate Chip Greek Yoghurt Cookies

These cookies are on the cakey side and are best eaten hot or dipped into hot tea, coffee or hot chocolate. You can even warm them up and serve with dollops of ice cream or more greek yoghurt and a banana for breakfast!

Ingredients

  • 170g flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 egg
  • 80g soft brown sugar
  • 40g caster sugar
  • 80g Greek yogurt
  • 1 tsp vanilla
  • 2 tbsp pumpkin puree
  • 50g oats
  • 70g raisins

Method

  1. Instructions
  2. Preheat the oven to 190'c
  3. combine the flour, baking soda, and salt
  4. beat together the eggs and the sugars
  5. add the yogurt and vanilla
  6. gradually stir in the flour
  7. finally add the chocolate chips
  8. drop cookie dough {1 tbsp} onto a parchment lined sheet
  9. bake at 190'c for 18 minutes
  10. Allow to cool on a wire rack for about 5 minutes and eat while warm.

I’m keen to make these again soon, if you have any ideas for flavours please let me know. Maybe I should do a flavour each season? Peppermint anyone?
