Tried and Tested Dinner for Two

Halving Recipes, sometimes easy, sometimes almost impossible, am I right? I will often instantly dismiss a recipe if it serves 6/8. This is an eclectic list of dinner for two, just hearty, wholesome food I’ve enjoyed recently.

What I Changed:

If I’m honest, I just used this recipe as a starting point, my version is pretty unrecognisable apart from the filling. Our served 3, I only used 250g puff pastry to top, 6 small new potatoes, but everything else about the same. It was delicious. I feel pretty pleased at being able to deviate from the recipe this much! I use to be really nervous of making changes but this worked great. In future I would make a salad to go with it and serve four. Sorry for my pastry which sunk on one side, poor pastry form!

What I Changed:

I halved the recipe with relative ease! Using 3 leeks, 2 carrots and about 100g of chorizo. I didn’t have any cabbage. BBC Good Food doesn’t have many dinner for two recipes, but many are easy to halve.

What I Changed:

Almost everything! I used 115g Welly Foods ham, 200g pasta, 3 spring onions. I intended just to halve it, but it didn’t work out that way! This served us two just perfectly.

What I Changed:

Okay, I’ve been naughty here, this doesn’t serve two at all, but soup is the one dish I don’t mind making a batch off, we are greedy so I only got 5 portions out of this. 3 for the freezer for a quick midweek meal or lunch. 3 dinners for two!
