Ham, Sweet Potato and Leek Risotto for Two

I’ve commented before on how much of a nightmare it is to find recipes for two. Especially things like risotto for two, hearty one pot meals always seem to serve 6/8, when I’m browsing the internet or flicking through my cook books, I simply click on or turn the page when a recipe serves a gazillion.

When it comes to meat, we don’t eat it everyday, I make a habit of shopping at Ocado or my butcher where I can be sure of the source and care of the animals. When Welly Foods got in touch and sent me some ham and chicken to try, I was impressed with their ethics and all their meat comes from one single British farmer who is Freedom Foods and RSPCA assured. They have some great recipes on their website but they all serve four {small groan} so I’ve done the hard work for you and adapted one of their recipes into a risotto for two using seasonal ingredients you might already have at home.

Notes: This requires a roasted sweet potato, I chopped a few up, shoved them in the oven to roast and then used the rest for lunch boxes. If you want to be fancy make sure you fry some of the sage leaves in advance.

Ingredients

  • glug of olive oil
  • generous chunk of butter unsalted butter
  • 1 onion, finely chopped
  • 1 garlic clove, minced
  • 100g risotto rice
  • splash white wine
  • 1/2 litre hot chicken stock
  • 2 leeks, sliced
  • 1/2 pack of cooked WELLY ham cut into strips or slices
  • 150g roasted sweet potato chunks (about one)
  • 2 sage leaves finely shredded
  • Garnish

  • 6 sage leaves cooked in oil until crispy

Method

  1. Glug your olive oil and throw a chunk of butter into a pan, let it begin to foam.
  2. Add the chopped onion and garlic, sauté for 3 minutes until soft but not coloured, then add the rice and stir into the mixture so it's coated.
  3. Add a big splash wine and stir for 1 minute and follow with the leeks. Immediatelyadd the stock ladle by ladle ensuring the stock is absorbed before adding more, once all the stock is absorbed keep stirring
  4. When it is the consistency you like add the ham, sweet potato and chopped sage, season to your taste with salt and black pepper.
  5. Sprinkle over the crispy sage leaves before serving

This ham, sweet potato and leek risotto for two makes a perfect mid week dinner, because it’s a smaller size you don’t have to spend hours stirring arborio and waiting for litres of stock to absorb, we prepared the base and then added the ingredients from step X when we got in for the gym, taking it in turns to keep an eye on the pot while we showered. I like my risotto really sticky, what about you? I never like to put a cooking time because consistency seems quite personal when it comes to risotto!

Would you bother making a risotto for two or does the length of some recipes put you off? The one that always gets me is lasagne, I just can’t face all the faff for just the two of us.
