I wrote our meal plan a few weeks ago around the concept that Aubergine was in season, I simply searched my pins for Aubergine and these came up. After our Pescetarian experiment we are still trying to eat more fish and so we tried a new fish recipe from Pinterest too..

What I Changed:

We added Spinach. I wouldn’t make it again, it was just a bit boring. 🙁

What I Changed:

I really regret not buying flaked almonds, I think the addition of them toasted on top would have taken this dish to the next level, that being said it was delicious and I would make it again. We froze half, I’ll let you know how we get on with it.

The Pin: Quick Ratatouille from The Healthy Foodie.
My Version:

What I Changed:

A good quick version but I found it a little lacking flavour wise, I added parsley, balsamic and Worcestershire sauce to ramp up the flavours in this dish. In hindsight I would have grilled or roasted the Aubergine and courgette as I think this would have changed the depth of flavour completely but then it wouldn’t have been quick ratatouille! I’ve made a few recipes from this blog before.

What I Changed:

I really, really loved this. I would definitely make it again, I swapped cashews for salted peanuts and used 125g noodles (two nests) and 220g broccoli (the size of the packet).  A bit of a blast back to Vietnam. The recipe just serves two which is always a help, it means I don’t have to faff around halving. I’m becoming a big fan of Eating Bird Food.
