Tried and Tested Pins 3

Yes you heard right, I’m making this a regular thing, I loved posting Volume 1 and 2, so I’m back for Tried and Tested Pins Volume 3! Have you been inspired to try any of your pins? Foodie or otherwise?

Another question for you, do you refer back to any of your own blog posts? Is there a recipe you made years ago that you refer back to often, or a workout post that you use whenever you are on holiday? Let me know. I use this popcorn recipe for movie night all the time. Anyway sorry for the digression, I’m just curious.

The Pin: Half Bake Harvest’s Sweet Potato Straws (From Edible Perspective)

What I Changed: 

I pinned the Half Baked Harvest recipe but followed her inspiration back to Edible Perspective and used the instructions there to make these amazing sweet potato straws. It’s the first time I’ve got crispy sweet potato at home! I served them with salmon, salad and The First Mess’s Spicy Cumin Garlic Drizzle. A real internet dinner! I was also inspired by Tieghan at HBH to make these Vegan Granola Bars.

 

The Pin: Wholesome Cook’s Coriander and Cashew Pesto

What I Changed:

We still had some coriander hanging around in the fridge from the market and I had no meal planned which used it. In order to use it up I set about making this recipe, I used half olive oil and half coconut oil. We ate it later on in the week with pasta and it was so full of flavour. I don’t think I’ll buy a jar of pesto ever again.

What I Changed: 

I used my new julienne peeler to make these, they went down a treat, I thought David would hate them, but he liked them. I served mine with a made up on the spot tomatoey-pancettay sauce! I’ll be making them again. David and I also decide it would be fun to do half spaghetti and half courgetti to up the veggies in any pasta meal. What else can I julienne? I tried sweet potato and sliced all my fingers – ouch.

What I Changed:

We had a portion leftover for lunch the next day. We used a normal onion. Brown butter is magical and this may be the best home cooked pasta dish I’ve ever made.. make it!
