Tried and Tested Pins 4

You guys liked Volume 12 and 3 so here’s the next instalment. Have you been inspired to try any of your pins? Foodie or otherwise?

The Pin: Jamie Oliver’s Aubergine Parmigiana

What I Changed:

I used white aubergine, but otherwise kept it as Jamie says. Yum!

The Pin: In Simone’s Kitchen’s Cauliflower and Beetroot Cous Cous

My Version:

What I Changed:

I used 3 cooked beetroot instead of two raw, I didn’t use any ghee and I used the honey in the dressing as we are not on Whole30. The recipe says serves 4 but we ate the whole lot. David thought it would go well with lamb chops – in which case it would do 4.

 

The Pin: Mexican Hot Chocolate Snickerdoodles from the Post Punk Kitchen

My Version:


What I Changed:

I used Hazelnut milk and a mixture of ground nut oil and olive oil. Be warned this recipe makes ALOT of cookies. I think next time I’d halve it. Luckily I was going to Bacchus Marathon the next day so I knew I’d have lots of eaters. My boyfriend is a butter lover and was astonished when I told him these were vegan.

 

The Pin: Jack Monroe’s Kale Pesto (and Kale Pesto Pasta)

My Version:


What I Changed: 

Nothing! We’ve had this a few times, swirled through tomato sauce in a chicken bake, as Jack suggests and simply over pasta for a quick meal. There’s still one pot in the freezer, it felt very therapeutic to make such a big batch!
