I really enjoyed sharing my pins with you last time, so I’m back for Tried and Tested Pins volume 2!

The Pin: The Londoner’s Banana and Nutella Muffins

My Version:


What I Changed:

I made these for breakfast for me and Charlie, when we met for a super pre work walk down the Thames. I halved the recipe because I knew I couldn’t be trusted with muffins with nutella in hanging around the house. I still used two bananas and completely forget the butter, but actually I don’t think it had any effect on the muffins because we had the extra banana to replace it. Make sure you use browning bananas. These went down well with both of us.

 

The Pin: The Londoner’s Carb Free Carnitas

What I Changed:

I made this for three of us, as we had Sarah from Goldilocks Running staying with us so I roasted three sweet potatoes to go on the side, just to bulk the meal up a bit. I also added a chilli to my salsa. If you want to bulk it up for three, I think wraps would be yum, but then I’m not going for carb free! I don’t own a slow cooker, so I cooked my pork in a casserole dish for 10 hours at 100’c. I worked perfectly. The meat was amazing, we even had leftovers in our lunch salads the next day.

 

The Pin: The Veggie Nook’s Banana, Walnut and Date Oat Parfait

My Version:


What I Changed: 

I didn’t bother with any of the sweetners, instead of adding walnuts and dates to the layers I just chopped some over the top. I used flax instead of chia and it didn’t quite work so if you don’t have any chia reduce the amount of milk. Milk wise, I didn’t have anything fancy at home and had to resort to regular cows UHT – bad food blogger, shoot me now. Sometimes needs must!

This was the first time I tried ‘n-ice cream’ or ‘healthy ice cream’ or whatever you want to call it and I loved it! Eating ice cream for breakfast was such a treat, I’ll be using the frozen banana part of the recipe again and again.

The Pin: Spicy Chorizo with Lentils and Beetroot

My Version:

What I Changed:

I didn’t have a red onion so I used half a normal onion instead. we had lots of lettuce so rather than buying rocket we used lettuce, this was a filling and satisfying meal. There were some leftovers which we ate with cheese and biscuits for dinner the next night – yummy!
