Tried and Tested Pins 6

After my major fail last time, I am pleased to say that Pinterest has been coming up trumps recently! I must say though with all the Christmas festivities, a new job and everything else I have neglected Pinterest a bit but I am ready to use it to the max for a New Year meal planning so watch this space!

The Pin: Pinch of Yum’s 5 Ingredient Coconut Curry.

My Version:

What I Changed:

I halved the recipe, used tender stem broccoli and baby corn instead of the head of broccoli and I served mine with quinoa. You’ll end up with half a can of coconut milk left, but you can  make this yummy Coconut Baked Porridge.

What I Changed:

After my previous fail with Ella this one was a success! iI hardly changes anything, we didn’t have any jalapeano peppers so we used a tsp of easy chiili. Ours seemed much more liquid than Ella’s but the spicy broth was welcome on a chilly day! I would definitely make this again.

 What I Changed:

I doubled the recipe to feed David and I and omitted the honey, we like different levels so it’s best if we add our own! I didn’t have any pomegranate for topping so at the lovely Meghan’s suggestion we had sautéed apples and flax with ours. I used half hazelnut milk and half semi skimmed because I was using up what we had in the cupboard!

 

The Pin: Paleo Cupboard’s Sausage and Vegetable Bake

My Version:

What I Changed: 

I halved the recipe and used 2 peppers in place of the butternut squash. As we are not paleo I also put two big dollops of my Mum’s Grape and Sage Jelly on the top with the sausages for extra umph!

    These all look yum! Thanks for sharing 🙂 I love the look of the curry. I recently tried an Honestly Healthy curry which was a winner – it’s the Burmese curry from their app. I recommend. It’s easy peasy, tastes delish and is packed with good things! x
